Vietnam is a long country surrounded by China, Laos, Cambodia and the gulf of Thailand. The geography of this country plays an important role in the country’s cuisine. Plain rice (com) is at the center of the Vietnamese diet and can be found with almost every dish. It is grown all over the country which makes it very accessible and cheap. Rice is also transformed into other common ingredients such as rice wine, rice vinegar, rice noodles, and rice paper wrappers for spring rolls.
Vietnamese also cook many different soups (pho). We can find noodle soups with vegetable, beef, chicken ect. They are usually very tasty as they put some herbs in it, lemon, garlic and condiment such as the nuoc cham which is a sort of dipping sauce.
Rice is also used to make noodles. The fried noodles are a very popular meal in Vietnam. Three main types of rice noodles are used which are the Banh Pho that are the noodles used in the soups, the Bun noodle looking like vermicelli, the banh noodles which are a thinner version of bun noodles.
Vietnamese cuisine varies somewhat by region, with Chinese influences (such as stir fries, noodles, and use of chopsticks) in the north, as well as Cambodian (Khmer) and French influences in the south. The climate that can be different in the north and in the south affects the availability of ingredients. Consequently we can find different dishes from the north to the south but all of them very tasty!
