Thai cooking class

While visiting the north of Thailand, we took the opportunity Chelsie and I to learn more about the Thai cuisine. We are both in love with Thai food so we took a cooking class in Chiang Mai. We did it with Siam Rice Thai Cookery School which has been awesome!
The traditional Thai dishes use lots of herbs such as the Galangal (thai ginger), lemon grass, kaffir lime (green wrinkled fruit), turmeric, sweet basil or chili. They also use difference sauces such as the fish sauce, oyster sauce, soy sauce or the black soy sauce. Most of these ingredients can be found in the west part of the world in Asian stores.
We have been impressed by how Thai food find the right balance between the sour, sweet, salty, spicy and the bitter. These 5 elements are always well used in the different dishes giving an amazing taste to the food. Try and enjoy 3 vegetarian Thai recipes below !

 

Vegetarian Coconut milk soup

Ingredients
  1. 50 gr of tofu
  2. 1 tbsp of sliced lemon grass
  3. 1-2 leaves of kaffir lime leaves
  4. 1 chili or more depending on how spicy you want
  5. 2 tbsp of brown sugar
  6. 2 tbsp oyster sauce or fish sauce
  7. 1 tbsp of chopped coriander and spring onions
  8. 2 tomatoes and 1 onion cut into quarters
  9. 1 lime
  10. 5 dl coconut milk
  11. Some water
Instructions
  1. Bring the coconut milk, water, onions and salt together to a gentle boil.
  2. Add the tofu along with the kaffir lime leaves, tomatoes, spring onions, lemon grass and chilies. Cook until just tender, a minute or so.
  3. Add the brown sugar, oyster sauce or fish sauce.
  4. Finish with a squeeze of lime and some coriander.

Pad Thai

Ingredients
  1. 2 tbsp cooking oil
  2. 100g rice noodles
  3. 30g sliced tofu
  4. 1 egg
  5. 50 g of chives, bean sprouts and long beans
  6. 2 garlics
  7. 5 tbsp water
  8. 2 tbsp oyster sauce and/or fish sauce
  9. 1 tsp soya sauce
  10. 2 tsp brawn sugar
  11. 1 tsp black soy sauce
  12. ground peanut
  13. chilies powder
  14. 1 lime
Instructions
  1. Saute the garlic with the cooking oil.
  2. Add the tofu. When it is cooked add the egg, stir until the egg is cooked as well.
  3. Add some water, the fish sauce/oyster sauce, black soy sauce and the soy sauce.
  4. Stir until the noodles get soft.
  5. Add the chives, bean sprouts and long beans and cook them for 1 minute.
  6. Add some ground peanut, chilies power, lime and sugar.
  7. Enjoy the delicious Pad Thai !

Bananasin coconut milk

Ingredients
  1. 50 g sliced bananas, cut into 1 inch squares
  2. 1/2 cup coconut cream
  3. 1/2 cup water
  4. 4 tbsp brown sugar
  5. 1 tsp salt
Instructions
  1. Boil the coconut cream with the water
  2. Add the sugar, slat and keep boiling for 2 minutes.
  3. Add the bananas and boil until it is cooked.
